For the arm rest cover, it's simply removing 10 or 12 hex screws underneath the console lid, pop off your old cover, put on new one and replace the screws. Done in 3 minutes.
Can you tell the exact diameter of that steering wheel? How much was it and can it be ordered without paddles?
Same size as the .1 wheel. I forget the MM size but you can get a slightly smaller diameter GT wheel apparently.
I was going to go that route but every option I found was hundreds of dollars more and wasn't worth the increased cost for me.
I'm sure you can find .2, alcantara wheels for manual cars. You won't find a .2 GT3 wheel without paddles though. Search fleabay. Tons of wheels up there.
The other path is to simply buy a used .2 manual wheel and have a shop customize it for you. Lots of shops do that. You can also go to Alibaba and find tons of overseas suppliers that do custom wheels for cheap.

QQ: Is it the standard T10 fitting on the screws?
Contemplating if I should get the "PORSCHE" or Crest alcantara lid to replace the factory one installed on my 991.2 gts as I did a similar swap on my previous 997.2 (hence asking if it’s still a T10 screwdriver needed) :-)
Haven't tried to use the Dragy to proper times yet due to snow, but like you @fsmich I will be using a Kenu phone holder. Have a bunch of them as I use them in all of my vehicles, and also keep a few spares in my travel bags (for rental cars).
They will stay in the vents under WOT as they hold my phone just fine when launching.
