Talk about whining Rushman...geesh you're doing an awesome job of it yourself. You are failing to understand the issue about the seats.
The insurance argument IS NOT FALSE. I challange you to look into it with any major insurance company. What company do you work for? Care to post a legal statement about this? I have done my homework on this and I see you have not.
Bottom line is simple...if you disarm any part of the federally mandated air bag system and install race seats in a street car that do not have the federally DOT tested side impact air bag in the seat you insurance will be void in the event of an accident on the street. Even worse if you have a passenger in the car and they get hurt due to not having the tested and properly functioning air bag system lawyer will have a field day in court with you.

I called PCNA last week to file an inquiry on the lack of sport bucket seats for the US market. I was told I would get a response this week. I will call again if there is no answer by Friday and will update everyone when I get more information.
As for installing these seats in the 991 GT3, I really don't think it would be an issue aside from money and the hassle of the install. I would assume that you get an airbag light when disconnecting the seats which would have to be reset by the dealer. You might be able to prevent this by disconnecting the battery beforehand.

What GT2 Sport Bucket seats are they using in Europe for the 991 GT3?

I guess all someone has to do is find the part number for the GT2 style bucket seats for 991 that is available in Europe and compare it to the part number for the GT2 bucket seats for 997? If they are the same, they should definitely fit, if not, I guess it doesn't necessarily mean they won't fit, but there is a possibility.

Ignoring all of the hating and whining stuff, and focusing on seat swaps, I can tell you that GT2 seats can be swapped with the original 997.1 GT3 "sport seats", and that the OEM seats were electrical for seatback tilt and maybe for seat heaters, while the GT2 seats were all manual. Both have airbags. So maybe the same will prove true for the OEM 991 seats.

There is a guy on 6speed that did it in his 991 C2S, I just send him a message asking what issues (if any) he encountered
Can't imagine the GT3 being that much different from the C2S as far as the seat connectors are concerned.
So if he overcame the issue it is very well possible (lets wait when he gets back to me on it)
I also send a message to Champion Motorsport with the same question
