I’m currrently running 8100 X-CESS 5w-40, mostly street driving with a few tracks days each year.
Pros & cons of moving to 300V, and what weight would you recommend?

The 8100 X-cess 5W40 is an excellent choice. It is formally approved by Porsche for the A40 profile- yes, the exact same approval as the factory "recommended" product. You could also consider the 8100 X-max 0W40 which also holds the same approval.
Yes, we have- typically you will see oil consumption improve by 10%-30% depending on brand. Of course there is always exception to the rule when you have a failing part or a design flaw that no oil will ever fix.- Nick

You can't go wrong with The 8100 X-cess 5W40 or 300V Power 5W40. The only downside to 300V vs X-cess is cost- also if you care about having an approved Porsche oil, the 300V will not hold an approval. That being said, 300V will virtually outperform the X-cess in most testing measures with the exception oil change interval length. So if you follow the factory recommended ODI's, the X-cess is a better bet as it has been thoroughly tested to meet Porsche's long drain standards.
If you want higher power output (engine dyno proven), more reliability and better overall oil performance, 300V w/ EsterCore technology is an obvious choice. As far as grade goes, we make 300V available both in the 300V Trophy 0W40 and 300V Power 5W40 that is suitable for most Porsche applications. You can step up to the 15W50 if you have high fuel dilution or high oil temps.- Nick

We sell your 300V and your 8100 to our Porsche customers, nothing but great things reported back! I get asked this question a lot though, what is the recommended interval for the Porsche HPDE weekend warrior on the 300V? I know there are several variables, but what would you say?

Welcome. I run your RBF600 brake fluid in all my cars, even my pickup as using the same thing in all my cars makes the annual bleed that much faster and easier with my Motive.

My indy uses Motul exclusively and I will never use anything else.
