Looks like a thumbs up on the M Engineering unit. Section starts around 9:20. Glad to see in the wild!

No one is forced to tune for additional power but many of do whether we "need it" or not.

The 911 Turbo is known for awesome straight line capabilities and is why many people opt for this model at these prices. The tuners can get you even more of the same and there is nothing wrong with that.

Three Wheelin'
Power increases are most noticeable at triple digit speeds where aerodynamic drag is sapping hundreds of horsepower. I agree with you that at lower speeds traction becomes the issue so the extra power is "wasted".

With respect to 911s not being about drag racing, I would disagree a bit with that. I think since the 959 came out with its absurd 0-60 and 1/4 mile performance that was a couple of orders of magnitude better than its contemporaries at the time, then the AWD 993 turbo that came out with close to 959 performance, I think a segment of 911 turbo buyers enjoy the straight line speed aspect of these cars. Porsche knows this as well, hence the launch control that does an amazing job lauching these cars off the line for drag racing.

And triple digit speeds remind me when I went to Skip Barber racing school at Sebring 30 years ago, the biggest take home message for me was don't race on the street and certainly don't excessively speed. Take it to the track. Otherwise, sooner or later you pay the price. There are simply too many unknown variables on a public road that can ruin your day.
