Two comments on your build: 1) Alu pedals look nice but they are not as grippy as the standard pedals and 2) despite having PDLS+ in my Macan, I'm glad I skipped them in the T. The standard headlights are fantastic. I'd spend that $2k elsewhere.
Thank you for the recommendations. I have been informed via 992 owners that have the aluminum pedals that they are a non-issue. This car will never be driven in the rain, not intentionally. Any slippage with rubber soled shoes will be rare. I have been on the fence about them, but I appreciate how they brighten up the pedal box in an otherwise very dark interior. Like @Macboy I do not care for the standard headlights with the silver at the top of the units. The price to rid myself of the silver as well as add auto high beams is worth the price of admission.

Having previously owned BMW's with deviated stitching I became a lifelong fan of it. IMO, you see the inside of the car a lot more than the exterior so spend the $ and be happy if the look appeals to you.
I have owned BMWs myself for several decades, and still do… BMWs deviated stitching tends to be rather subtle and a large part of that is because the consumer is not selecting it and/or specifically paying out of pocket for it. It also has to please a rather large base.

I almost didn't get leather and stitching. I had a certain spec until the week my build locked in and then I dumped almost all other options and went for it. It was $8k since not part of an interior package. Best decision I made and I'm happy with it.

Agreed. I spent $11k in what amounts to a bit of leather and deviated stitching, belts and dials. Stupid on paper. Smart in practice. The cabin is like your home's interior.

Quick question for the UK people.
My order froze back in mid July, the dealer has said that the car is due with them on the 6th October but it not showing as built on the 'My Porsche' website. I did, however, notice that I now have an allocated VIN number today.
Question is - How long was it between a VIN being allocated and any actual build shots of the car starting to come through? I'm thinking mine needs to be built by the end of the next week to have a chance of being with the Sytner Porsche by the 6th!

I'm debating a few build configurations, curious what you all think.
These net out to be a similar price:
A) PDK*, carbon roof, ACC & LCA
B) PDK*, standard roof, RAS, extra fuel range, ACC & LCA
C) PDK*, glass roof, extra fuel range, ACC & LCA
D) Manual, carbon roof, RAS, extra fuel range
* I know, I know... however, I would want to take longer trips in this car and having the ACC option and letting my wife also drive it (can't drive stick) would be very handy but I'm a little worried about resale.

Normally your build date should be about a month after your freeze date which would mean August build and that seems to marry well with a 6th October delivery as it takes about six weeks to get from build completion to Emden and onto a boat and the over to Sheernes and delivery to the dealer.
I had a sad issue with my first allocation well documented on this thread. it was frozen early May built end of June arrived at the dealer on July 17th, The issue of the Vin normally means the car is about to enter production. Maybe you missed when it was first announced.
I am locking my spec next week (a little early to be safe) build due mid October delivery due at present 24th November.
As NewTo911s say check with Sytner. Hope that helps but it sounds to me like all should be good for the 6th October arrival.
