Not ever. One time I had a very competent man offer to put the car away for me (at Villa d'Este on Lake Como) and he wasn't the least put off when I asked him if I could put it away myself. (This was a man who routinely parked Ferraris, Bentleys, etc.) What I choose to do is to tip well (better than for the valet) and then place it myself. I haven't had a problem with that approach.

Nope...to ease the discomforted look the valet always has, I simply inform him that I cannot trust him with the gun that is under the seat. I them give him a $20, and ask where I should park the car. The comment from the valet was dead on. When I was a kid, if someone handed me the keys to a $100K car, I'd have fun with it for sure, even if only a 100 foot drive (or less) to the spot.

What about inner-city boutique hotels? I'm a huge fan of this genre and have assembled a tidy list of places that I love to stay at in SF, 90210, San Diego, etc.
In many of these places the parking options are slim to none. Valet park or don't park. Or worse, park in some dumpy public lot/garage where the inner-cityness of the area exposes the car to who-knows-what.
This is the thing that bugs me the most - I love to motor in the Porsche and prefer to stay in the heart of the cities I visit. Parking is often a point of stress.

NFW. i have valet at my office and park it myself. even then, a valet backed into my 997 with a trailer hitch when i only had 700 miles on it. gave it a nice dimple but they paid. oh, and they paid for the scratches on my E55 that i did let them park.
