My Targa GTS standard color is in a similar situation. Entered production 2-3 weeks ago and never left. I am told it is waiting on a post production update (whatever that means) and delivery date is now delayed a month. That's all I know.

Just got a call from the dealer! The car has been completed at factory and should arrive within 2-3 weeks 
Super excited to see it IRL soon! The car is gulf orange with black wheels, full leather, carbon package, buckets, cage and some more options, will post some pics when it´s here.
