The RS springs (from PET) are;

964-343-531-80-504 (FRONT) Yellow
993-333-531-81-504 (REAR) Yellow

Ask if you can see the training materials that were handed out at the initial mechanics training/introduction for the 993. The equivalent manuals for the 964 go into detail not covered in the Service Techniks or Workshop manuals. And a decent explanation for the dots is not written in the 993 Techniks, Workshop manuals or PET so it is unlikely anyone here past or present would have posted anything about them. The explanation you're looking for will probably look something like THIS.

on the topic of 1 line 2 lines or 3 lines, on rear springs anyway, from the shop manual 42-27, there are 3 tolerance groups, each uses a different spacer.
1 line = 8mm spacer
2 line = 5.5mm spacer
3 line = 3.0mm spacer

3 lines are obviously longer, are they stiffer as well, I dunno, but I suspect they are

Jason, Poses at my local does not contain 993 training material, only training material starting from 986- 996 up until today.

Only 993 material in the Poses at my stealer is:
Labour operations
damage codes
diagnostics
technical information (TSBs)
Workshop manual

You won't find them in POSES and what they are now call training manuals are actually (i think) the Service Techniks which are different and less detailed. The 993 manuals (if they even exist) will be small booklets and might look something like;

How are they ordered without part #s, and what are the applications for each?

If you're talking about the manuals (or are you asking about the RS springs?) there are no part numbers and you can't order them, they were handouts and are not in the literature catalog. That's the problem, I've tried and the only time I've seen them is when a mechanic retires and sells his stuff. There are also videotapes from PCNA showing how to install windshields, etc. but other than once stumbling across a box cover I haven't had any luck finding copies.

How can the three different springs be ordered without individual part numbers?

For that matter, how does the mechanic know which of the three to order?

I do think it's cool that you can even find this kind of lit.

Luck of the draw? There is a guy at PCNA that was just hired early summer who's job it is to interface between the part guys at the dealerships here in the USA and the techs in Stuttgart. So if you're looking to order what in theory might be stiffer springs I would have your dealership ask him and try to special order them? I wouldn't know where to even begin trying to get someone to handpick a part out of the warehouses in Ontario or Atlanta but I also never asked.

Without a part number I don't think he will have any choice? All that is listed in PET are the intermediate pieces;

993-333-511-01 5.5mm
993-333-511-02 8.0mm

I have PO3, which was the introductory Service training manual for 993 and WKD 424 520 Technical Specifications. There is no detailed info about the springs in either

As for ordering and what you get, I believe that most just stick with the "replace in pairs" approach and take what they get.
