Brake fluid makes a bit of sense because it absorbs moisture even if not driven, but even that can be tested rather than just indiscriminately changed IMO.
The same goes for oil. These modern synthetic oils can easily last 5-10k miles but most of us are changing them every 1000 miles to stay in Porsche's good graces and avoid the pcm warning messages.
The cabin air filter is not getting any use in my car because I have the windows down every single time I drive the car anyway, I could care less if it's doing anything at all. And most of the time you can remove it, shake the debris out in the trash and put it right back in. The only time it needs to be replaced is it it starts to smell. If you car is always garaged and in a low moisture environment then you're just wasting money on replacing that too.

With that said, I get all the service done at the dealer simply because I feel for value retention, the service records should stay with Porsche and the car. It's super wasteful, and I wish that wasn't the case, but ...
If you're not concerned with record keeping, you can easily exceed the suggested intervals with no risk to the actual car. Of course, if you're tracking the car frequently then you're likely doing more frequent maintenance anyway.
