Which one looks better is very subjective and nothing more than a matter of personal taste. Choose whatever you think looks best.
Both are white, so they will look not that much different.

Ugh, I just realized one of my all-time favorite colors is not even on the list for consideration yet (meaning no one has requested it lately?).

Not great at linking web sites but I was looking at 911's on cars.com last night and there are a few PTS's out there. I remember a pastel orange and a couple others.

Leather-to-Sample
A question was asked in another thread about LtoS which I thought might be interesting to repeat in this 'Custom Ordering' thread to have for the record in one place!
Question: Is there an approved list for leather to sample colors?
Answer: Perhaps...but I never seen it or heard anyone at 'Porsche Exclusive' talk about a Leather-to-Sample 'official' list. The only 'leather-to-sample' I know that is currently approved on the 991 is 'Natural Brown'. The latter was a special/natural leather offering in the 997 which proved to be very popular with the Porsche 'cognoscenti'! That 'Natural Brown' availability on the 991 was confirmed to me by 'Porsche Exclusive'.
Ordering 'Leather-to-Sample' can be tricky (from design point of view) since all interior plastic trim will come in 'Black' by default. You either choose a leather color that will work w. 'Black' trim or pay to have all the trim also covered in that same leather! So caveat emptor.
In actual expense, 'Leather-to-Sample' is not much more expensive to do than the regular (e.g 'Espresso' or 'Garnet Red') special/natural leather interior. 'Espresso' or 'Garnet' is currently US$1510 extra. LtoS is US$1750 extra. And is less than Espresso/Cognac two tone - US$1940! But the fact is that L-to-S is seldom ordered because so little is known about it...plus the risk of how it will look when it's all set & done. I am a big fan of Leather-to-Sample when done right!

Besides Natural brown, the following colors are also available for 991:
Cinnamon brown
Chestnut brown
Ascott brown
Umber
Probably more colors (they have lots and lots of samples), but these were the colors I asked for and all got confirmed by Mr. Frascka from Porsche Exclusive in Stuttgart.
My biggest problem with LtoS was, like Eduardo mentioned, that all plastic parts will be black, unless you decide to let them cover everything in leather. That is gonna be a very expensive thing to do.
For my preferred configuration of Two-tone Black-Chestnut brown with everything covered in either leather (where possible) and brushed aluminium where leather wasn't possible, all finished with contrasting stitching, they made me an offer of EUR 10,400 excluding VAT and other taxes. (Converted to the actual Swiss price I had to pay it would have been CHF 15,200 or converted to US dollar $ 16,900)

This is what I'm told from the dealer:
"Regarding Z-option: # 24951 'Carpet in deviated color': This option isn’t an option any more through a traditional build. There is a special requests department with Porsche. If you wanted to do carpet in a different color, we put a request in with them and they tell us if it is feasible and what the cost would be. They tend to be pricey options, but we can put the request in."
Does this sound right?
