No disrespect to instructors, I've met great and not so great ones, the professional assistance you receive on a proper driving school is quite different. I've done the PSDS about 7 times, the last 3 RSR, and I'm still learning a lot every time I go there.
I would NOT turn off stability control on a high powered street car. I find it odd an instructor saying that, when your safety should come first regardless. Well, I spun 2x in my first track day and got my solo sticker (under a lot of protest, against my will) just after it, so what do I know?

For the first session, I just want to have my students have fun, and love it. Basic stuff for first session. If they come back, we go into more detail.
I love to have my students turn off the nannies after they start to feel confident. They generally spin out within a few turns. A great teaching moment.

Rule #1 on the track is safety first. Those tires are NOT safe. Someone mentioned not getting in the passenger seat to instruct... hopefully they would fail inspection as it's not safe for you and is reckless for other cars and unsafe for every other driver on the track - not to mention your drive home; God forbid it rain.
Rule #2 is get the right tool for the job and the user experience is always superior. These tires are awful anyway.... Michelin PS4S would be a huge upgrade but of course SC2 would be ideal. I'd debate the hoosiers or anything beyond SC2's for a street car as the mechanical components are not built for it and also it's harder to learn how to drive and a novice will become optimistically ambitious and overly confident.
YMMV. This is just my internet opinion. I could be a 12 year old kid typing anonymously behind a keyboard.

These were my stock PZeros. They had roughly 6k street miles on them in Feb this year (3kish from me and 2700 from first cars owner) Took them to the track and did about 3.5hrs of track time in a day with them. I reluctantly drove 5hrs back home in them and put my winter tires back on.
