I'm always in one of three modes, in order of how frequently used:
.
- Sport mode, even around town, usually letting the PDK control shift points with an occasional paddle downshift
- Sport plus and manual mode, controlling all shifts with paddles.
- Sport plus in auto mode, on track or on fast, technical back roads I'm not as familiar with.
On some earlier generation PDK's I've driven, I can definitely see why you might want to tweak the programming, but I've never felt my version of PDK lacking.
That said, I'd love to drive a 991 TTS with the Cobb PDK someday, maybe I will see a reason to spend the extra $K.

my car is a non S so I started with the OTS stage 1 tune to get baseline with an S car. Exhaust up next.
I don’t know what I don’t know. None of my M cars ever got a DCT tunes so I don’t know I am missing out. Sam asked and I declined. I suspect I will end up doing with when Sam does a custom tune for me.
I drive in sport 99% of the time. The PDK seems great as is. Like you I would love to feel the difference before adding it. But that doesn’t seem like it will happen.
Not sure how much the PDK programming has changed over the years, but I previously wasn't really a PDK fan but find the stock PDK programming on my 991.1 TTS to be excellent. Or perhaps more accurately I find a few modes in the stock PDK to be excellent....

As for the PDK TUNE on the 991 .1 & .2 TTS vs my old 997.2TTS
Paul, I'll agree the PDK in my 991 is better and not as in need of change like my 997.2TTS was, BUT as rodsky said above, The Cobb PDK tune REALLY CHANGES the shift points / strategy in "Normal" mode, allowing us to use it for mileage and easy driving without being in 6th - 7th by 25 mph and lugging the engine.
When I switch, I'm going to purchase the PDK tune for my 991TTS for the enhanced shift points / strategy! I'm hoping I'll like it as much as I did on the 997.2TTS
As for modes I use.... Right now, I AVOID using "Sport Mode" due to the programmed Pops, Crackles, and Burbles by Porsche in that mode. This Catless Tubi exhaust is Loud as it is and I've never been of fan of the Pops and Crackles under deceleration!! It's too, "Hey look at me"!
So I use Sport Plus or my "INDIVIDUAL" Mode (I programmed it to be like sport plus but WithOUT the spoilers deploying) in Manual Shifting.

Conservative guess is that it adds at least 20 HP. For $6 it is the greatest mod in the history of mods
