Mountain bikes? Just picked up a new Santa Cruz Hightower. Amazing bike. 1st ride at highland mountain bike park. So fun chasing down my 2 teenage boys. Yeah I’m old lol

Thanks to this thread... I needed weekend wagyu fix - I really need to get back on the bike, every shop is out of stock though... apparently covid makes people want to ride bicycle?

left is australian waygu bms12 whatever cut that was (pure fat , if chocolate were savory this would be it. I can eat very little of it but it is insanely intense the best. actually it’s not beef. I think of it as savory chocolate that just melt in ur mouth )
middle is filet ( doesn’t taste like filet other than being tender soft. so much flavor almost like ribeye with less texture if that makes sense )

see the meat has no marble (not bad not well... it’s just meat)
thanks... I usually cook wagyu on cast iron, its difficult to get right on the charcoal, it always wants to flare up!

I made it about a third of the way through eating the thing. Are the whole heel end (bottom piece in the pic), chateaubriand (middle in pic) tomorrow. Threw the chain (top in pic) in the freezer for the tacos later in the week. Went a bit too far cooking, but it was still good medium rare. It ain’t mooty’s dry aged wagyu, but $11/lbs for grass fed Australian seemed like a deal.
Made an herb crab sauce, and had some with a gravy from short ribs I made, but forgot a pics sauced as I just dipped.
ACME is a division of Safeway found on the east coast. I like the store better than stop and shop or Shop Rite. Never got limits on milk or egg purchases in March this year during COVID.
I bought two of these loins this past winter from them as well. Used the leftover trim meat to mix with Costco organic ground meat pack and their ribeye fat trimmings for hamburgers. Very good..
Costco whole ribeye slab vaccum pack is $9.99/lbs and I buy that to add for hamburger fat trimming blend after portioning out ribeye steaks.

That sounds really good. The trim, minus the stuff that was not edible — what’s in the third pile so mainly the chain, got made into tacos. Forgot pics but they were good. Got 8 tacos out of them (two meals).
I get my ribeyes at Wegmans, they are $11/lbs for bulk pack boneless so four steaks individually vacuum sealed ready to cook (I bought eight steaks this weekend). They also have dry aged tomahawks, but I am too cheap to eat them often. Wegmans is the best grocery chain around me. Acme is convenient since it is like 1/2 mile away, but tends to be more expensive and not quite as good as Wegmans, but they do have really good specials. They did cap at 10lbs or three packs of meat during the bad times, but it was easy for me to go every few days. I have never been to a stop and shop or shop rite. Giant is not bad though. Wont pay Whole Foods prices and Traded Joes meat is not my style. I buy a lot of staples at Walmart (including mobil one). Even if you are not on a wagyu budget, you can eat well.
