My 82S M28/11, which is 40 engines up on the introduction, has all those alterations. The tell tale without taking anything apart is the different valve stem seals (if they're original and haven't been replaced).

Valve guide installation needs to be done very carefully so that you don't crack the heads.
Check the guide bores to make sure there is no galling/damage of the bore. The old guides should have been reamed out, and then the last bit of the shell removed to avoid damage to the head.
New guides are oversize and need to be machined down to give a couple of thou oversize press fit. The guides can then be chilled and the head heated to easily press them in and achieve a shrink fit without damage. Once they're in, they need to be reamed concentric to the seat to suit the valve stems, and the seats recut/cleaned up. Valves need to checked and cleaned up in the process, springs tested/replaced, and then the valves installed and shimmed as per WSM spec, to give correct height and seat pressure.
Print out the WSM sections related to this and give them to the shop doing the work, and emphasise the procedure regarding pressing in new guides. A 928 savvy shop won't have a problem but others might assume they don't need to be so careful.

I had a monkey install guides in a set of early heads once and they cracked the boss in the port. Much crap ensued.

Hot head, chilled and oiled valve guide is the installation pattern right?

Just searched and all the dimensional information you need is in the dimensions and tolerances publication. Back that up with the appropriate sections of the WSM and you have everything you need.
The dimension and tolerance docs for all years are on the Jim Morehouse CD's. Let me know if you can't get hold of the D&T PDF for your car and I can email it to you.

I sent the springs to you - and they have the spring seats that cam with the heads.

No - I specifically remember - the spring seats are simply the shims that were in the zip lock bag with the springs.
