Which is the quicker car: 944S or 931?

I've never driven a 931, but looking at specs it should be right around as quick as an 8V 944.
Based on that, I'd say, stock for stock, the 944S would have the edge, at least in a straight line. Handling may be somewhat better on the 931 due to the slightly lower weight.

Probably depends how long the race is.
931 should keep up with or pull on a regular 944.
931 will probably pull ahead at first against a 944S when the turbo kicks in...but pretty shortly afterwards the S will come "on cam" and pass by.
Probably similar top speed, S has more power but 931 is better aero-wise.

they haven't realized you bought a 924 yet.

I've owned both and at this time, I think my '82 931 "feels" quicker than the '87 944S I owned several years ago. That feel is a combination of lightness and the manual steering rack. I've got a long way to go on the 931 restoration before I'll know how it feels factory fresh, but I think I'm going to be very pleased when it's all done.

the Series II 931's put out just 11 hp less than a 944S and has +4 lb ft of torque coming in 1000 rpm sooner than the S. The big thing is though that the 931 was 300+ lbs lighter than a 944S. Ultimately they are very different feeling cars and the 944S is MUCH more refined and civilized but in a comparison of raw straight line acceleration, I think the 931 would be showing it's 16v cousin it's tail lights.
Also, a 931 is an intercooler away from breaking 200 hp, and you'll be out well over 1k to get a 944S over 200 real BHP.
And as Michael observed below, the factory 931 internals are forged and way beefier than the 944S, they can take 300+ rwhp all day long.
Now...if only someone build a 16v head and a real long tube turbo header for the 931..

Not to mention that with some simple mods, you can put a 931 past stock 951 power levels... It takes a at least a few hundo+ to get a 944S to 200bhp but can also be done.
