The leather trim essentially dissapears into the rest of the dash and doors, if that is your goal, mission accomplished.

I went with brushed aluminum and silver/grey seat belts and threading. Seemed to tie in nicely but I don't have the car yet!

I don't think it is. I had black brushed aluminum in my 981 Spyder and it had more contrast than that. Nothing wrong with leather, it just blends into the background more, so you get less of a defined line of contrast.
