I registered for the IDE in August but would like to go to the IDE in May as a spectator just to check things out and watch. Is that an option? Who can I contact to set that up cause I can't find any email address on the PCAUCR website to ask the question

Lots of visitors do this. You will need to sign a waiver at the gate and then find Neil to get a wristband and sign another waiver to enter the paddocks.

Any other people get acceptances for their registration for IDE or DEs this season? I tried emailing the registrar a few weeks back but no response.
I want to book in the track inspection/wheel swap, etc and if I'm not accepted then would be nice to be able to plan other things workwise (work never ends, sigh)

There are two IDEs this year, one in May and another I "think" in August (please don't quote me on this.)
Which one did you register for? I assume May's session.
