why not shuffle steer?

Actually some of the pros only have one hand on the wheel....I don't promote it or teach it ...I will never be as fast as them...then again I realize I am only a semi-trained rank amatueur

exactly!

the videos really dont show shuffle steering, those are situtions where the pro felt it nessesary to take a hand off the wheel and generally, if you look closely, they put the hands back in the proper spots on the wheel. shuffle steering is doing that when NOT needed , and certainly to a much greater extent as shown in the original video. If you shufflesteer, it really is due to being lazy or just bad habits. (especially if you are learning, which is the point of this discussion)

Schumi lets go of one hand due to steering ration limitations, and Seena gets wildly crossed up hands wise in a drifting situation where wild corrections were needed. Both are hardly a relative of the first video posted.

As far as driving with one hand, denpending on the car that might not be an issue either. Heck, in airplanes you can fly with one hand with a lot more force needed for control, as well as a 2nd dimension. (pitch control).

The simple answer is: you do as your instructor tells you.

Different instructors may have different biases toward certain techniques, although some things should be positively consistent such as smoothness. Most instructors that I know are not militant on shuffle steering versus not. Not setting hands for a constant radius turn, well, I think most will comment on that.

If an instructor tells you to do something that you are not comfortable with trying, it is your responsibility to speak up to discuss. I would be interested in having a militant no-shuffle instructor with me for a few laps. That would be interesting.

It truly was a good example of how shuffle steering made it more difficult for a slow reacting driver to input quick corrections. Shuffle bad. BUT. that said, when the rear swings too far, I sometimes let go of the wheel all together! let it self correct and grab at the right moment. - I used to drift a LOT. So, Im also a steering wheel offender. Admitting is half the battle right?

I was refereing to the two pro videos vs the video of the newbee.

Look, it was only an observation. Certainly you know my positon on hand position, this was something Ive seen before with folks Ive helped and corrected with what I feel, is proper hand postion.
