Last time we did a VRBO right on the main drag in Elkhart Lake. Very nice place and easy walk to restaurants, etc. Much cheaper than the Osthoff, but that place is phenomenal.
Make sure you drive out to Schwartz's supper club for dinner, one of my favorite places.
Also the BBQ place in Plymouth is really good.
Great wings at the Bear in Elkhart lake too.

As mentioned the Osthoff is the #1 place in Elkhart. Then Siebkens Resort.
American Club Kohler is fantastic (also mentioned above) especially if a significant other is coming and doesn't want to go-to RA, they can take advantage of the top notch spa; however if you're spending all day at RA doesn't make a lot of sense to pay $700+ per night for a bed; additionally it's in Sheboygan, a quick 15 miles away.
My final recommendation for DE track days, no frills, is Baymont by Wyndham in Plymouth; about 8 mins from the track, near the BP that sells 93 octane gas; usually about half the price as Siebkens or Osthoff; pool/spa, free breakfast, and car/trailer friendly.

Depending on the event you are attending, many of the clubs use Siebkins as a meeting point which is next to the Osthoff. Stayed their many times as well due to the location. No complaints. But as mentioned you are pretty much parking on the street.
Osthoff has a big parking lot and a spa which gives you something for your spouse/partner to do. My wife prefers the Osthoff fwiw.
Obviously the further away you stay, the more time in commute which is what makes Osthof or Siebkins convenient. Don't forget to visit Siebkins historic racing bar.
