I have and this is where the PCCBs shine the brightest. The power and feel bringing the car down from high speed is much better than the stock iron setup. I'm sure outright stopping distances are similar with similar tires, but the PCCBs offer better performance at speed. I've have one car with each and I've driven two near identical C2S's with each setup. I'd take the PCCBs all day and twice on Sunday if cost were not a factor. I also find that I can set my corner entry speeds more precisely than the iron setup, i.e., they offer better feel at speed.
On a street car, I'd always choose PCCB if given the option. And I hate the yellow calipers.
And the only place PCCBs are 'sensitive' are at slow, around town speeds. And you get used to that real quick and adjust pedal pressure. They're not sensitive at speed at all, just awesome.

And you comparison cars are? Please include MY, brand and where you have driven them back to back. No flame, but memory gets scewed easily when doing this on different days, venues.

The first time were two near identical 2013 991 C2S's I test drove back to back alone at Livermore Porsche in the spring of 2014. Since then I bought a 14 C2S with PCCB, a 14 Cayman S with iron and 16 Spyder with iron. I've driven all three back to back multiple times. If I were speccing a street Porsche today, I would absolutely get PCCB's.
I get the cost issue, particularly if tracking. But the argument that the iron setup is better performing or has more feel at speed is nonsense. Telling that every time Porsche tries to set a fast lap somewhere with one of their street cars, it always has PCCB brakes on it.

Feel is very subjective and pad dependent.
Nobody has said iron performs better.
I've never met anyone at the track who is actually fast that prefers pccb.

Or Randy Pobst. He seemed to like them when he test drove the GT4 at Laguna for Motor Trend. Funny that they fitted PCCBs for a car for a comparo where they wanted to turn the fastest lap time possible...

PCCBs reduce down force by blocking air extraction through the front wheels, that was enough to decide it for me (and the pebble thing).
