Silly question but what is a self-adjusting clutch? It sounds like more "moving parts" which is the same reason I stay away from the 4 wheel drive versions.

From a logistical standpoint the Cayman seems to be easier to work on (easier access by lifting that engine plate) and has less features/moving parts that can go wrong but the 911 has rear seats (extremely handy in a pinch) and a much better sounding exhaust.

Of course driving a Cayman for the first time could change everything

It's something to do with the pressure plate adjusting itself for friction disk wear. Not sure what all it's doing. I believe this S-A clutch is on the S models only, not included on base Carreras.

911 MAY have a better exhaust note, but the Cayman intake sound is INCREDIBLE when uncorked.

If you're looking for just a pure sports car, the Cayman may fit the bill perfectly. The mid engine platform can out handle the 911 hands down on a tight twisty road.

You need to drive both models and see which one turns your crank.

Where do I find more information on what an uncorked intake is and how I'd do that for a Cayman?

Many agree that the back seat is far from worthless, a major reason they bought the 911 over other Porsche models or other 2-seat models, and makes it possible to enjoy driving it more frequently. Check out this thread.
