For rollers you typically use focus tracking mode in your camera (AF-C in Nikon speak, AI Servo in Canon speak) with a single focus point and a slow shutter speed of 1/60 or 1/30. The photographer was in the passenger seat of a car next to mine. We’d match speed at 35 to 45 mph and he’d take bursts of photos. We used an industrial park on a weekend afternoon since it had long, straight, wide roads and little activity.
More serious pro shoots use cargo vans or sprinters so the photographer can lie down to get low angle shots while wearing a safety harness.
