So, I'm looking at a 997.2, C4S or CS with lots of options or a low mileage "used" not a demo 991 C2 with not a lot of options but has enough of what i want.
Any thoughts on what I should get? There's a $12-14k difference.

So many variables , not sure where to start.
Saving $12-14k could be motivation enough.
I have a 997.1 c2s and I'm very happy with it. I've check out the 991 and like it as well, however, personally I couldn't justify the giant cost increase to replace my car with a similarly optioned 991.
Again if you like the newest thing out the 991 is the choice.... if not, do what I do! Keep my 997 well maintained and polished and everybody "thinks " its NEW!
You should test drive/compare both and see what you think, that may answer many of your questions.

I just went through the same exercise over the last 6 months. This is a very personal choice and I switched back and forth several times between the 997.2 & 991.
In the end for me, options and very low mileage were key for me. A convertible S was the minimum baseline. When I built or tried to find a used 991, I was easily looking at almost $120K new or less with a used one.
I found a 2010 C4S Cab that was loaded with about $40K of options that had 5K miles on it. The color combo was great and then it made my decision very easy to go used.
I have owned a boxster S and went into this purchase knowing that this would not be the last Porsche that I would buy. After owning my car one week and one day, I can envision that I will keep this for a good 5 plus year.

I personally do NOT like 991, and would pick the 997 and savings over it in a heartbeat... BUT, if you don't mind 991, and the basic options are ok for you, it's probably a better buy in the long run as it's a newer car and platform... all depends how much you like/hate 991.

I bought my 997.1 new in 2006. I have about 24K miles on it. This summer I drove a new 991 'S' around Germany for just over two weeks. The driving experience is very different between the two. The 997 is more 'raw' and the 991 is more refined. Yes the PDK in the 991 and DFI make it faster; the longer wheelbase makes it smoother; the interior is more plush and the handling might even be better. So the choice should be easy. But it is not that simple. After two weeks of driving the 991,I was looking forward to getting back into the 997. It just feels more like a sports car and was just more 'fun'....GR

And yes there are so many variables that it comes down to personal preferences.

Test drove both this summer and went with a 997.2 GTS. It just seemed more like what I envisioned a 911 should be like. I also like that I got something that is more unique than a regular 991 C2 or C2S.

It's so interesting to see how owners express the progression of driving experiences. When the 997 came out in 05 it was so far ahead of the 996. That earlier series (despite its styling and heretical water cooling) was hugely popular and drivers knew it was smoother and more comfortable than a 993. 997s greatly improved upon 996s. And so on.
I've looked at and read about (but not driven) a 991, and I know they're superior in every quantifiable way: performance, technology, fuel efficiency, everything. My dealer is begging me to trade in. Not crazy about the enlarged shape, but that's me. My brother has a Panamera Turbo S and the new 911 looks more like his car than mine - but shouldn't.
Like anything new, 991s are beguiling. But I find that each new-series advancement seems to add distance between the driver and the road. I believe that the 997 (.1 or .2) is the ideal combination of road feel, comfort, performance and (these days) price. Go for it.
