As I recall, water to temp and oil temp off the peg.
I just drive mine in sport mode and the car handles the revs perfectly for warmup, but I have a PDK.
Took the words out of my mouth. For PDK cars, auto/sport mode takes care of the warmup with no attention required shifting right around 3,000 rpm. Takes a while for the oil to get warmed up though, even in Florida summer heat.
2006 S here, start it, wait about a minute while I settle in, put my music on etc... till the rpm drop (idle), then cruising not exceeding 3k till the needle is at/near 200, and even then its a gradual increase (4-5k) till its been at 200 for a few minutes. Ive had a few times where leaving work there are eager cars around me that are anxiously waiting for us to get to open road (out of the base/school).. and I just let them throttle by lol. Do I want to ? Yes, but I'm not touching over 3k till the car is warmed up haha

oil temp at 180 is my release the beast threshold, which happens after about 10 minutes since I run a deep sump oil pan and low temp thermostat. Always between 2,000 and 3,000 rpm during that time - not higher, not lower, and light throttle use.
I do the same. Technically the motor isn't "warmed up" until the oil is hot, which usually happens 5-10 minutes after the water reaches operating temp = I don't do any serious revs until this point.

I don't get over 200 in mine either, unless it's hot out or I'm on it. It seems to me that once the oil is at 175, it's fully doing its job- it's probably pretty liquid as soon as the needle starts moving, but in my car it moves pretty quickly past 175 once it starts moving.
Here is my process:
-Get in, get situated, check my blood pressure for increased heart rate
-Turn the key in ACC and check the oil level. Add if necessary
-Start her up, idle and wait for the idle to drop
-Start driving it under a mild engine load while keeping under 4K RPM until the oil temp is at 200 degrees
-Once the oil is up to temp, let her rip
I took the same approach on my 08 C4S Cab here in Colorado, especially in the winter months, 2000-3000, except I tried to start it and let it idle for 30 (min) to 90 seconds to let it warm up a tiny bit - until the idle dropped from 1250 to 750. That is I believe per Porsche recommendations. I didn't always run it till the idle dropped, but I tried to. It can take up to 2+ minutes.
There are many posts about this topic and the only thing common is to keep RPMs under 3k until close to 200.
Whether or not to let it warm-up at idle varies by person .I start and go and keep her under 3500 until shes close to 200 oil temp
My owner's manual states the following (on page 77): {I have a 997.2}
"When starting the engine, be ready to drive immediately. Drive the vehicle at moderate speeds and avoid engine speeds above 4,200 rpm during the first 5 minutes."

On a 997.2, you can't check the oil level unless the engine is at operating temperature and is idling.
