Hopefully someone can answer but when the seats arrived, the seat back was all the way forward in both.
when I lift the lever on the top side on either seat I can hear something moving but the seat back doesn't release.
Is there some sort of mechanism that stops it if the seats aren't actually installed?
Can't bring them to an upholstery shop if they can't be moved

You probably need to hook them up, or hookup a battery to electrically recline them.

I think hard back color match Sport seats are a great upgrade.
I have Savannah interior.
Been half heartedly looking for GT3 seats, but in Savannah, folks seem to ask 3 times the money of black.

Are the seat covers ripped or torn? you should do a search on the company called fibrenew,they do restorations, like dyeing and repairs, new leather covers are going to be expensive, plus hard to match the originals. I have restored sport seats and it is some what labor intensive, like anything if its done correctly its not going to be cheap (upholstery and or dyeing) possible replacement of foam etc.....good luck
