Definitely red with a black car, don't worry that it's a NB.
As for rebuilding, if you do a brake fluid flush with ATE TYP 200 every two or even three years your calipers will last more or less indefinitely. It is corrosion not wear that cause problems. And if your calipers need rebuilding why not your master cylinder?

How about just chipping off the larger flakes of the clear coat and overspraying them with a little urothane clear spray from the DIY store. The clear will wick under the remaining chip edges and produce a nearly as new finish. Best part is you don't even need to remove the calipers to do this. Just clean them off with electronic motor cleaner, mask the wheel well with a little paper and spray. As a side benefit doing this also seals the bleeder screw caps keeping the bleeder screw threads nice and corrosion free.

However, if done profesionally, a urethane paint/claer coat will do the job perfect as well. It will hold a lot of heat, abuse and cycles, but as we know, heavily tracked cars will suffer sooner or later of paint problems on their brake calipers regardless what method you use to paint them (unless you go natural color or the like anodize process)
I went from std. black calipers to red in my C2 as the clear coat was peeled off as well.

I chose to go with white letters (template) for my red caliper in my C2, but for my set of Brembo on my Skyline GTR I was lazy to go through this process and used vinyl letters diectly on them, but this car is heavily tracked and sees a lot of heat, so the vinyl bubbles up a bit and later the red dot burned a bit with a blackish color....so if OP will track his 993 I wll advise him to go just like I did with my red calipers and avoid this probem.
