You should know whether your wife will go for a pink watch. If it's the only nice watch she has and you're not sure, I'd recommend against it.
Black goes with everything.

Out of your 3 choices I'd go with black for reasons mentioned above. However, since you are seeking opinions (and we know that everybody on this board has an opinion and some stink), I'd add Mother of Pearl to your list. Black is cool but is also very masculine. Mother of Pearl looks much more feminine and very elegant. I'd boot blue and pink from the list all together.

I got my old lady this one, she wanted blue. I don't believe they make this model anymore, It's called the ALter Ego diamond bezel, Nice watch, just don't pay retail though. I paid about 1/3 retail price@$1300, make sure you shop around.

I bought my wife a blue Tag Link, but it was a darker blue than what you have pictured above, she wanted blue though.

A 21yr old will be more into fashion rather than taste, and I believe the latest trends for women that you see in all the magazines will be exclusively large face watches that you can't miss. My recommendation is to take her to the Mall and let her choose her own....
