Which of these three 1995 993 would you buy?
I have found three nice 1995 993 for sale, all have there plus.
I would use the car as a weekend toy on good days. I enjoy cleaning the cars and trying to keep them looking new.

1995 993 - Guards Red/Cashmere 993 in excellent condition. Car is equipped with Bilstein HDs and H&R springs and 18" wheels. Clutch replaced at 85k miles and 90k service just done. 32K asking

1995 993 - 28,900 mi, air bag, ac, cc, lthr, p/seats, p/windows, am/fm, pdl, p/mirrors, Excellent cabriolet, 17" CUP wheels with enameled crests, Fab Speed, new tires, recently serviced (Haus of Performance), car alarm, car cover, 3rd owner, non-smoker, always garaged., 38.5K

Which car would you buy given they are all strong and good cars, and why?

With all due respect, I'm surprised you have grouped these three cars. Other than all being GR in color, they are vastly different cars:
Car 1: higher mileage (at least 90K miles) $32K
Car 2: cabriolet, low mileage (28K miles), stock, $38K
Car 3: low mileage (unknown), $39K
I'm surprised you are considering both a cabriolet and a coupe. It seems that most people are pretty much decided on that before looking (how do you plan to use the car? any tracking considered? just driving in the sun?).
But, nonetheless, in choosing one I would quickly eliminate #1. It is too expensive for what it is. It would be more reasonably priced in the high 20's. I also like lower miles, so I would gravitate to #2 or #3. Once you decide for yourself whether you are a cab guy or a coupe guy, the decision will be made much easier.

IMHO, if you are looking for a weekend pleasure cruiser and maybe an occassional DE/AX then go for the cab. But that's me. I went from a 928S to a 944S2 Cab to a 964C2 Targa and have found that I really miss the ragtop.

I would vote for #1-- This may leave you with some funds to fix anything needed-- cars of all mileages need work at times-- if not, use this money to get the car dialed-in to your liking

IMO they all seem somewhat overpriced. I hope thats what the market is doing though (from an owners perspective)
I would go for #1. I bought a high miles car and its been great. #2 the cab will inherently have more things capable of going wrong (top issues etc). #3 is nice sounding but he's trying to get paid for the upgrades, and the last time I checked that just doesn't happen.
#1 in the high 20's would probably be a good deal (if it checks out). Give it time though, those aren't "great buys" and time will motivate the sellers.

I would purchase #1 if you can get him to go down in price some due to mileage. If he does it will leave you money over for mods and the fun of doing it.
The other cars while very nice, there price are heading towards the low end of the WB cars.

For a weekend toy car, you've got to get a cab. That makes your choice real easy.
Seriously, there is nothing like cruising around with the top down, sun shining, wind blowing and hearing the falt 6 without any body panels to interfere!

I'd say go for #1 if it checks out.
You can probably use the higher milage (Although I don't consider 90K all that high) as leverage on the asking price.
It always amuses me how some folks place lowball values on average 993's ...unless it belongs to them of course.
I'm not a fan of guards red but it may be growing on me.

To me the real question is coupe or cab.
For me it's a coupe. When I decided which 993 to buy it was:
1) Body Style
2) Color
3) Miles
4) Year
For me I would be all over #3.
