I like your build a lot since it's very similar to my own.. I also did the 20/21 Carrera S wheels for summer and I bought a set of 19/20's for winter (I live in the Mid East of the US and we get temps below 40 for several months). I also have the exact same color combo, Gentian blue exterior with Black/Mojave Beige interior. Personally, I think it's a great match. My prior car was a Boxster in Night Blue Metallic with a Sand Beige interior. Very classic look.
With Sport Chrono the base car is plenty fast and fun to drive. Not sure you need PSE though and I left that off my build - although it's the only semi regret I have. I also added power steering plus (which you may want for both you and your wife) as it makes steering while parking easier and doesn't affect the steering feel while actually driving. I did opt for the glass sunroof as I was coming from a convertible and didn't want a cabriolet 911 since I really like the classic lines of the coupe.
One other thing, I do agree with someone else who suggested the premium package. I opted for that on mine and you should consider it.
In any event, it's hard to create a bad build. Enjoy!

You might consider ACC (adaptive cruise control). My wife refused to use standard cruise control even on long trips. Her 2019 Acura RDX has ACC and now she uses it, Unless you plan on tracking the car not sure you need Sport Chrono. Sport is standard. With a PDK Sport+ IMO is a must for the track, I like PSE. Not sure how low your current cars are, but if you have a steep driveway or similar need to consider Front Axle Lift. Its pricey. Heated seats are standard. As already suggested 18 way seats are worth checking. out. Your configuration has the Premium Package based on the listed options.

For my 25th birthday I ordered a new 1970 Signal Orange 914. I drove 4 cylinder Porsches for the next 30 years because I couldn't afford a 6.
Now, for the first time, my #10 and # 11 Porsches are in my garage. Wifie has her RX350 in the other, Im now driving a 2017 PDK C2S Endurance Racing Edition with factory PowerKit and a 2015 PDK Macan Turbo I just bought CPO.
I loved all my 5 and 6 speed Porsche manuals, but hated the one 7 speed manual I owned - a 2015 911 C2S. Too many gears and too clunky shifting. Too easy to downshift 3 gears instead of 1, when in the higher gears. The PDK in Manual mode is a fine dual clutch manual transmission, shifted with your fingers, instead of twist rowing with your arm and leg. But it's so clever in Auto mode that my wifie thinks its an automatic. You are making the right decision here!

I frequently rode ski lifts (pre covid) with skiers in their 80's and 90's. If you can ski at that age, you can drive. If you keep this one long enough the next one will be probably drive itself anyway. But, nice build.

One septuagenarian to another, Adaptive Cruise Control. ACC includes Automatic Braking. Like many purists, you may never want to use ACC in a 911 - but ACC is worth considering for the Automatic Braking it affords aging neurons.

Skip the larger tires/wheels. I opted for the larger S tire/wheel option on our old 997 and regretted it - the ride quality degraded and at times it could be downright brutal. For the base Carrera stick with the base wheel size. My $0.02 worth. As for the rest - to each his own, but I like the premium package too.
For our 992 (took delivery in January) I pretty much larded the thing up with a ton of options..... No regrets as to any of them. Love heated seats and wheel for cold mornings. One thing that I really like a lot is the front axle lift - boy has it saved our front spoiler from curbs, driveways, you name it. I know it's $$$$ but like you I think our 992 might be our last one, so I went for broke figuring in 10 years I won't feel the extra $2300 but my front spoiler will thank me. And like you, went blue (night blue metallic) but full slate gray leather interior. It's a very nice combo.

Raced 356's, 911's, Cup cars, have owned 30+ Porsches, currently own 2015 turbo S and 2021 992 base 911. You can't make a wrong decision except for exterior and interior color. If you haven't seen it in person DO NOT take the chance.
My perspective is not far from yours (age as well). My wife will drive this 911 occasionally and we will go together for drives so:
1. Std. black interior is wonderful, looks great with new interior design. Leather is not necessary.
2. Sport exhaust is an unnecessary noise maker, artificial pops are annoying. Standard exhaust sounds very nice when you stand on it but is enjoyable when cruising.
3. Ventilated seats never did much in 911's, worked great in Cayenne, possibly small packaging.
4. Sport Chrono provides small boost of power you will never feel, save the money...this is not a GT3
5. the 20/21 in wheels make a very big visual impact and in the standard silver against the blue will look great. Just use comfort tire pressure option 29/32 and ride is very nice.
6. Power steering plus is a cheap option but really works.
7. PDLS+ is also one you can easily live without.
8. I opted for non-glass sunroof as I like a windows down, roof open drive but thats me.
Save the money on those expensive options and get the front clip ppf'd and the car ceramic coated and go drive it. Its your car, so it has to make you smile when you walk up to it.

Really like your 992 build including the silver wheels.
You may want to consider ordering the Option of Window Trim in Silver ($400 cost). This is definitely a personal decision and in my view enhances the classic 911 roof line. See the configuration rendering that follows. Attached is a photo of my Cayman S in Chalk with both silver finished wheels and silver window trim.
Really like your 992 build including the silver wheels.

if I would leave anything off it would be PDLS as it made me dizzy
also I didn’t get the21/20 tires which I wish I had
other than that the cars incredible in every aspect
this one is #. 6 at 57 could be my last
