Thanks guys. I'm new to all things Porsche, including my own car.
But have been driving it in sports + and manual mode. It just feels/sounds better. No 7th is a non issue.

How does this feature work? I tried it whichever way possible to no avail (riding the brakes while approaching a red light, gas pedal, off both pedals). "pulling" the integrated pedals of the multi-function steering wheel simply downshifts. I made sure I pulled both at the same time, to invoke this functionality.

The manual on pages 156 and 157 describes separate functions for the steering wheel with buttons versus paddles.
It does not mention this paddle neutral feature for the steering wheel without paddles.

On 991.1 Paddle neutral only works with the Sport Design steering wheel with paddles the not MF wheel.

I was fueling recently and another 991 pulled up to the pumps. He told that recently he fueled with the engine running and subsequently he got a PCM fault that allowed him to drive on. He had to go to the dealer to have it cleared.
Apparently these cars cannot be fueled with the engine running.

I may have noted this before, but on non-sport chrono equipped PDK cars you can do a "soft" launch control start. Same method as the full launch but in Sport mode - left foot on brake, stomp right foot on gas pedal and it will disconnect the gear and rev to around 4,500 rpm and bounce the rev limiter at that point. Foot off brake, gear engages and - smile!
