I just watched a show I recorded about how cars are made and it covered the 911. It showed how it is dipped for rust protection and how primer is applied and then color is applied and then clear is applied. There was nothing done between the color coats or between the color and the clear coats - that is where a fine restoration or paint shop would be sanding the surfaces and make them smooth before the clear is applied avoiding any imperfections including orange peel. It would certainly add time to the process and probably cost but a couple of man hours could make a world of difference. At least that is my 2 cents.

There was a time back in the day when every Porsche was built almost entirely by hand. They could do that today, but the car would be priced right up there with the Pagani Huayra. At one point Porsche brought some Japanese car guys in, they saw parts and partially assembled cars strewn about, said Porsche-san there is a better way, and next thing you know Porsche leaped full blown into modern manufacturing.
You're right, a couple man hours would make a world of difference. It would pretty much DOUBLE the cost of the car! Watch those videos again. Porsche put $200,000,000 into just the paint shop. Listen on the several videos to how many times various people mention having 2 min 45 seconds (for example, that was an engine assembler) at their station. Its always precise to the second, never "we have a couple minutes." Now imagine modifying everything to allow several techs to spend several hours color sanding and polishing. They build an engine every 4 hours. When I said at first it would double the cost it probably sounded outrageous. But the more I think about it the more I think it might have been conservative.

Thanks for the comments. I use the Griot's Garage line of products and have been very happy with them. Clay, polishes, wax, speed shine, speed wax, various microfiber towels. (No affiliation, just a satisfied customer. )
