Once you turn on engineering mode, you need to:
Select the EPS module -> Codierung Anpassungen-> Manuelle Codierung ohne MCR Regeln (Entwicklung) -> Kodierwert: Codierung Fahrzeugklassen -> Select 'GT3' on dropdown -> Schreiben
And that should bring you to the page I have screenshotted.
Good luck!

Unfortunately in my 2013 991.1 S it doesn’t work. I get a steering error, which disappears once I code back to 991.1 S. I also have power steering plus which could cause an issue? Also I have a late 2012 Build Date, that could also be the issue too?

I had PSP so that's probably not the issue. However, I can feel PSP is not active anymore at parking lot speeds since updating the calibration. My car had a late 2013 build date, so maybe that's the issue. Hopefully someone with a later MY 991.1 is willing to give it a shot.
Edit: It looks like the steering rack itself has been "replaced" several times during the 991.1/981 lifecycle. It started off as 991-347-005-15, then 991-347-005-16 and the most recent iteration is 991-347-005-18. The physical part seems the same so I wonder if each subsequent iteration contained the latest available calibrations at the time of production.

Damn just tried it on my Launch X431 on my early build 2012, same error as JoeC. Funny enough even if I try 4/S I get error too.
I tried to calibrate steering sensor with GT3 selected hoping the error would clear but no good
Would be willing to buy parts to make this work... my assumption is the rack is "dumb", and probably takes input in voltage ranges or something, like PASM shocks where the module/DSC is the brains, and it is the EPS module that contains the model-specific values that my car is probably missing.
Anyone know where the EPS module is? I could buy a newer used one to try to install on my car.
this is the error it throws
Here is module info

I wonder if a newer PN rack, or OE "aftermarket" would do it....

@TPC Racing Tom, does the DSC work with the EPS system at all? I know Joe and I both have DSC's. We also both have PDCC which I wouldn't think would be the issue but...

I wonder if the EPS module firmware can be updated to a later version.
I see that Panameras had a EPS module update at some point due to recall

From what I can see so far the EPS module (7) is on the steering rack itself based on this Bosch brochure, as they make the rack

The only thing that strikes me as odd as I can't get it to accept any new settings other than 911C2/S, I would think I would be able to at least switch between 991C4/S or 981S, Cayman, if you can go from 981S, Cayman to GT3. I wonder if my EPS module firmware can be updated to a later version.
I am excited at the challenge of getting this to work.

Three Wheelin'
i did this tonight with my 2012.5 991.1 S and got the message 'steering support limited. possible to drive on'
so i went for a drive and the difference was immediately noticeable and much better. i switched back to normal, the message went away and the steering felt very heavy again.
put the gt3 back and decided to live with the message. transformative, really.
