epic finish. too bad you didn't include ounces of wagyu consumed as a sport on strava, you'd be WW KOM for sure.

Very good and simple duck. Patted down skin day before. Salt and pepper. In the morning, patted down skin again. Added a little salt and pepper.
Before the cook, let it sit out for one hour. Cooked at 325 for 3.5 hrs. Skin was so crispy.
note, when cooking for 3.5 hrs, meat is at 195/200. Not dry. But this duration made the skin crispy, see right side of plate.
also had pork meatball, kale and broccoli mustard salad.

JFC...for you guys that don't ride take my word for it that 1MM/vert is insane for a cycling bum that lives in a van but it's absolutely bonkers for a part time chef/full time detailer Granted you're aided by your climate and proximity to quality climbs but still, good lord...

+1 on that. That level of tasteful OCD is art, just another level. The drawers man, the drawer organization, wow....I'm hoping that in order to truly appreciate being a minimalist, one must first succeed at maximalist-ism (? ie. crap all over the place!)....every year I get rid of more things....Happy belated new year all. I submit tomato/caper baked feta, and what turned out to be truly amazing stuffed mushrooms and pork sausage (they from barefoot contessa, highly recommended and pretty easy):
