They don't bother me at all. If I had a choice, I would prefer the GT3 logo stitched in the seat headrest, similar to the .1
Is it just the LWB seat that have the stripe and no GT3 logo on the seat, or do both of those things apply to the sofa seats as well? (4-way, 18-way seats)

Good question, but my guess would be no stripes on the leather 4/18 way seats.
I keep trying to tell myself that I like the new front bumper, but every time I see the 991.1 I just keep finding myself feeling that the .1 is perfection. I hope that somehow (manufacturer part or aftermarket) there is at least an option for body-colored ram air intakes.
If this shows up at the New York auto show, I am going to hop a plane over and look at it in person.
I think it will grow on you (and hopefully not like a fungus). If not, pick a dark color that will minimize the change. I thought Porsche ruined the looks of the 991.1 GT3 following the 997.1 model. In time, I came around.
If u are not going to get buckets, I highly recommend the 4 way sport seats. When I ordered my 991.1 gt3 there were no buckets available. I ended up going with 4 way and it was the right call. There isn't much of a difference from the 18 way (which did not have seat memory), they are much less lighter (? Around 50 lbs for both), and u save a little $$.

Agree. If not going LWBs, the 4 ways are the way to go. You save a lot of weight due to the extra 18 way gears as you mentiioned. Also with the 4 ways, the lowest seat setting is 3cm lower than the 18 way seats at the lowest setting as the extra gears take up space underneath the 18 way seat. Also save couple grand.
