Most of my daily driving (being in the construction business) is in my 2020 Raptor. Over the weekend I "invested" in one of these - you know, to help keep the miles down on the GT3 and the Raptor.
I had a 2019 Raptor for about a year and a half. Such a great truck and honestly could have been a daily driver for a long time for me if it weren't for the challenges of the size in and around LA. I have limited parking (only 2 spots) and traded it for the Allroad which is a pretty stark contrast to my GT3. If I still had the truck and an extra garage spot an RS6 Avant would be excellent.
I like it a lot, but I had zero expectations, especially after driving the V6 which I found numb and floaty. The first thing that's noteworthy is that even though the HP numbers are similar, it's nowhere close to my 18 RR Sport SVR experience. Even in sport and dynamic mode what you get is a fast and practical SUV, not any sense of nimbleness or real performance. In a way a vehicle this size needs an engine this powerful to get any daily emotion out of it, even if it's at the expense of optimal off roading because of the added weight. The V8 doesn't make it special, it makes it acceptable, at least to me. Fundamentally it feels a lot more like a V8 FFRR than anything else, but I find it a lot more fun and interesting, but that is its closest equivalent.
TLDR, short of introducing the torque of a PHEV, the V8 is the ideal powertrain for this vehicle if you want to have a little fun on the way to Trader Joe's. The interior is also different and lovely in its minimalism. I haven't had it long enough to speak to reliability, and nothing is rattling yet ... those are my standing worries with this brand.

Does it sound like a v8 should at idle and all speeds?

Mine is coming next month!
You can tell it's a V8 at startup and in sport mode you can hear the V8 with the windows closed, but it's faint. The best way I can describe it is that it's about mid point between the growl of the SVR and the muted sound of the V8 in the FFRR.
