Disconnecting parking brake at hub, SOLVED
I'm removing the rear trailing arms and trying to disconnect the cable at the hub rather than at the interior handle.
PChar was kind enough to share an explanation in the 964RS trailing arm bushes thread.
But I still don't quite "get it"

the e-brake cable is not that hard. just watch out for your fingers. You have to pull the spring up on the shoe, and unclamp the small retainer, then pull the cable from behind the wheel hub assembly. It will be tight but just pull and twist, it should come right out.

Why struggle? It's much easier to remove the shoes etc and it will all fall apart. Good opportunity to clean and lube - make sure re-assembly is as per the pic (the expander can be fitted upside down).

I went back to the garage today and figured it out!
Use a medium-sized flat screwdriver to move the shoe enough so that the expander falls out from between the shoes.
The pins are held in place by the structure of the expander when in place.
Once you pull it out, it all comes to pieces.
Start slowly tugging on the cable from behind the hub w/ the Vise-Grips.
Once it's loose (it's just held in place by an O-ring), then you can feed it out the back of the hub, and it's free!
Repeat on opposite side.
