Sound insulation, rear seat, spare tire and associated tools.
Sorry I don't know how much each of those items weigh. And I know its nowhere near your 500# goal. But it's a start

What about taking out the OEM seats and putting in Sparco race seats (not touring seats)...should save about 20lbs. Take the sunroof off and put a Saratoga top. Remove the windshield washer fluid from the tank.

You wont get near the 500 lbs w/o a lot of effort and new components (meaning Lexan and Fiberglass). You can drop about 250 easily but thats including the factory power seats.
If its a street car (since youre concerned about leaving the stock seat in), there is not much you can remove that will not alter the appearance or function of the car.

I don't honestly think you can have a decent streetable/comfortable car and drop 500lbs. You'll have to do some MAJOR work to get that light, and things like windows (and window mechanisms), the seats, etc will all have to go. The good news is, since you lost your A/C already, if you would do some light weight seats, remove the rear seat, CF hood and fenders, and loose the insulation in the car, you will be close to 200lbs lighter, and you should definitely feel the difference. Also, look at the battery (there are some fairly light weight ones out there), flywheel/crankshaft, and wheel/tire weight, as those are huge places to save weight on.

the po said he pulled close to three hundred pounds out of the interior. there is nothing left except the dash and console. oh, and the race shells of course... no climate control, carpet, sound insulation, etc. its great fun so long as its not pouring, or above 100 degrees outside. its all about comprimise...
take care,
