What sweep oil temp gauge do you run? Oil temp up to 250 or up to 300? I figure normal operating oil temp should be about 210.
Also where do you guys mount the sensor? I have the ability to mount it in the pan or at my Prosport sandwich plate at the filter. Thoughts?

You should mount it in the pan, and more specifically, in the drain plug. The plate where the level sensor mounts is too high, and can get uncovered. You should mount it in the pan because temperatures vary pretty drastically throughout an engine, and virtually all "running" temperatures with which your mind is calibrated are taken in the sump.

Mine is in the oil plug, its a 140F to 300F gauge
On the street it rarely goes over 180 even in summer
If I run it hard for a while and then idle it'll go up to a bit over 200

Not many complaints about the sandwich plate....just check torque after removing the filter.

I have the sensor mounted in the turbo oil return banjo bolt. Its leak free and does not get in the way during oil changes.
The gauge's range is 120 to 300F, and it typically hovers around 180F during normal driving.

I've just drilled and tapped the back of the pan, about an inch or 2 up. I used to have one in the drain plug, but thought it was more important to have the magnet in there...

Not really the best place. Post turbo oil peak temps are expected to be quite a bit hotter than engine oil peak temps. Good if you are interested in monitoring how hot your CHRA is getting but no good for general engine oil temp monitoring.
