No sunroof, those are rare. I looked for a year before buying mine but I was not able able to get what I wanted (no sunroof, 5-speed, sport suspension, LSD and sport seats) so I ended up with a sunroof....
Best place to find those ones are in Europe or Japan.

I personally felt the bloated 928s (AT, sunroofs, dual A/C, big puffy electric seats, etc.) that were brought into the US market helped to kill the car from being considered as a dual purpose GT by more sporting enthusiasts.
Wish they brought in more of the pared down ones, although our family also loves the bloated ones too.

Constantine there is an '88 5 speed Track/DE car w/ roll cage, extra wheels, Recaro seats and more listed in this months (March) Panorama.
It's been said the best way to do one is to buy one already converted and make it your own.

The later S4+ cars end up being about 100lbs heavier than the early cars....its quite easy to find a 78-80 OB with no rub strips and no sunroof if you are looking to make a track car.....my 79 weighs about 2615lbs on an empty tank.....
