Why is there a 5-way splitter and a 7-way splitter
when on the 7-way splitter two vacuum ports are plugged?

Because the people that make the splitters had an entire box of "over-run" 7 way pieces and they sold them to Porsche cheaper than the 5 way?
Actually, I think that you probably have a 5 speed. On an automatic, one of the two extra ports goes to the modulator, leaving only one port?

Can't figure it out. Maybe the 7-way is a relic of an older MY design?
I have an automatic, but with a 5-way splitter. One to the intake, two to the FPR, one to the FPD, one to the trans modulator.
On a 5-speed, are only four ports in use?

Yes- 1 port from the lower plenum, 3 out to the fuel dampers and FPR, and 1 blocked.

Right, thanks for confirming. That picture is the promised land I will never reach but I can at least clean the engine up.
How are ports plugged from the factory? I've seen the put-in-a-screw method, but it is a bit too much shade tree mechanic for me.

IIRC there are little black plastic mushroom-shaped plugs. I have an extra old 5-way somewhere in the garage, will try to take a pic tonight.

They make a small metal plug to fit into the rubber tee. They are available.

Pelican says NLA but 928Intl lists them. Maybe they'll have 'em- certainly used, at least.
