A bit like when you open the fridge and notice the sell by date on the milk was yesterday....... It is still OK just will not be good for as long

Well here we go - here is the tyre mounted, and it doesnt look bad at all. The rim protection flange is huge, no way the wheel will ever get near the kerb!

on a street tire, its not an issue, track tires can be ok too,if they have been stored properly and dont have a lot of heat cycles. I just burned through my last '05 toyo RA1s and they were not that bad til the cords.

That fit looks fine by the way!
