In the past when I have "discussed" a car's value with an insurance company, they are interested in market value. So, I would suggest reviewing all the sources you can find; Autotrader.com, ebay.com, rennlist.com, 928oc.org, roadfly.com, etc. Of course any paper sources you can think of could be useful as well. Maybe chase down the known 928 dealers to see if they can provide any helpful information. Just going to Google and enter Porsche 928 sales brings up many possibilities.
It will take some time, but you should be able to find some comparable cars that have sold, or at least are being offered. That information in conjunction with your own photos and proof of maintenance should let you get the highest value.

Some times if you are willing to sign a waiver about any personal injury costs, the insurance company might be a bit more gracious. The last thing they want is a personal injury lawsuit. Of course you want to enure there are no personal injury issues that could arise before doing so.

Okay I gotta ask.....is the frame bent???? I'm hoping it isn't......since if it is then its totalled.....it looks a little bent in the photos, but it could just be the fenders?

I'm confused on totaling. If a car is totaled what is it that the ins company does? Are they basicly saying they don't want to pay for the repairs then trying to cut you a check for your car, had it sold intsead of totaling?

I have my 87 insured for $18k which is more that I could get for it and probably much more than the insurance company would give me but at least it is a good starting point.
On another note, my A4 got totalled and they said I could take the total offer or the total offer minus $400 and keep the wrecked A4. Maybe you can do this with your 928.

Rather than relying on the valuations your insurance company will provide, based on lowest common denominator "auto trader" cars, you can (and should) insist upon an independent appraisal of your particular car (at your insurance company's expense). Just make sure that the "independent" appraiser is truly independent and not beholding to your insurance company for referrals.
Provide the appraiser with as much documentation as you can of everything that made your car different from the "run of the mill" clapped out 928's advertised in the auto trader type pub's. In my case I had all my 1st place PCA Concours awards laid out on my work bench, along with lots of pre-accident beauty shots.
I went through this when I was rear ended & Allstate (acck, pittooe) totaled my 928. Bumped Allstate's "best and final" offer up by $2,500.

Find out now what a replacement will cost, factor in the fixit stuff that it would take to make it as yours was. Make a claim right away with that amount, with a deadline or qualification that syas that you found that one and it might sell, so you may ask for a different amount if they drag their feet. Make sure they are renting a car for you of paying for it anyway, while they decide to accept your offer for sale. Remind them that their insured actually stole the car from you, since that's the way you would present the case in court.
Important that you give them a number, so that they know a low-ball lowest-cost-they-can-find-in-auto-trader number will be way off the mark. Getting hit like this isn'y winning the lottery, but you should be made whole again.

That is why I have my cars appraised by certified USPAP appraiser. Then insure for stated value and NO ONE will ever f**K with you on payoff. It may be the only way to actually come out even if something like this should ever happen. Heaven knows how much time we put into our cars that 80%+ of the average insured public NEVER put into the cars they beat around in.
Take a lesson for next time. And I am sad to see what happened to your ride. My slant is for sale Glad no one was hurt.
