Both are great as you already know. I would choose the 951 as daily over a heavily modded 968, as the 968 unless built is not designed for a supercharger and could potentially have more issues. As a toy, it would come down to which you like better as far as looks.

Neither, too much maintenance. I had an SC'ed 968 that was great when it worked, but that was not often and was expensive to repair.

I suspect that a low-boost SC'd '968 would be easy to live with, but haven't tried it myself.
A stock 968 gives about the same power as a stock 951 and is easier to live with.
I'd go with the 968 but I happen to love the way they look. I also like a few things like the 6spd gearbox, improved interior, easier servicing of some things (e.g., clutch) and stuff like that.
I think both the 951 and 968 are great cars. If I were getting a car to mod like crazy while retaining a stock(ish) engine I'd go with a 951. For a regularly street-driven car I like the stock 968 just fine. If I were doing an engine swap I'd go with a 968 and swap in a purpose-built LSx (I'd build it to be revvy to match the 968's character and gearing). I'm also really curious as to how hard it'd be to swap in a Maserati 4.7L v8. They are inexpensive to obtain lightly used and come out of fairly compact transaxle cars...
btw I have a CR250R and H1--so share your love of two strokes. If you wanted to get really crazy you could swap in a two stroke boat motor. An auto-converted Optimax 300xs powerhead would be pretty darn cool.
