I'd have to go with Black, with black stitching...but the crest in a RED outline...damn...more I think about it...as soon as my car goes away for the winter...I may have to take off my steering wheel for refinishing...

Greg - that's exactly how my interior looks and exactly what I want to do! My interior is all black except for the Champagne seats. I want to change some of the interior parts to Champagne. How'd you do it?

I'm pretty impressed with the dye process, it was easy to do and the results were darn good. I'd considered having Rob recover the door panels as well but the dye looked so good, there was no need. I think you could dye the lower dash, the console and the door panels for about $30 worth of dye. The secret is all in the prep, I used SEM soap as a first pass cleaner and then SEM Vinyl Prep as a solvent for the second pass and then sprayed on the Palomino dye over the black door panels.
Of couse the leather is even nicer, so if you're willing to make that investment I'd highly recommend it. If nothing else you can try the dye to see if you like the look, I think it'll look great on your black car! Let me know if I can do anything else to help.

my bone stock interior with some minor updates. I originally had replaced the dash lights with white, but one of them started wigging out. I had these blue ones lying around so I put those in. They actually look better than I expected and not all that ricey.
