so... since this car does NOT have a/c (was deleted when engine was rebuilt) - what else can I delete? I'd imagine that the A/C delete was simply the part that was bolted on to the engine - everything else must still be there. What are the other major 'organs' that can be removed to save weight without too much of a headache?

You can also remove the condenser below that blower and make aluminum block off plates. Also, there is a bunch of weight that can be pulled from the smugglers box. Follow the lines around the car and remove tons more weight.

That's a hamster respirator. It coughs air equivalent to a hamster exhaling while having hamster sex, through a cage fan, out onto a small portion of the front AC condenser. Also known to catch fire and burn your car down to the ground.

The Bentley's repair manual has a good diagram of all the AC components. It's surprising how much there is and how it's stuffed around all over the place.

And if you do remove the AC components, don't just throw them out. They're worth money.

Ya, don't throw anything away. It's amazing what will be gold to another owner. I got several hundred dollars for my working autoheat. I've even got good footwell blowers just taking up shelf space that I know would sell tomorrow. My seats....LOLzzzz Who knew?
