Can someone clarify if the 718 GT4 has exhaust sounds piped into the cabin? If so can it be defeated easily?
Had a very brief drive of a new 718 GT4 and while hubby thought it sounded better than my 981 GT4, I disagreed although it sounded okay to me and better than expected.

The torque difference in the 718GT4 between manual and PDK is totally immaterial, so a 30-70 run should be exactly the same if both start in the correct gear. Transmission should have absolutely nothing to do with any of this unless the driver starts in the wrong gear. A PDK car isn’t going to spin up any faster than a manual.
The PDK has different gearing.

So, your best bet is to find an older model, as you seem to be leaning toward. Aside from 964, my personal choice would be 991.2 GT3. It should check all the boxes. However, GT4 RS would be another mistake! Sure, it would be faster, especially with PDK, by about 0.5 - 1.0 S. But, it will "not" sound any better! From some of the testing videos I've seen of 992 GT3 and 992 GTS, the sound was super awful! OPF/GPF is good for the environment; but, a sound killer. But, overall, a good sound from stock specs are dead! So, you're better off cutting the losses and moving on from 982.
Agreed, but this is the entire problem with the long gearing. I passed on the 718 NA-MT specifically because I don't want to drive around in 2nd ALL THE TIME. I have a 987S which has slightly better gearing and it is still primarily a 1,2,6 car. ..............

I spend zero time near 30mph and in 1st gear in both my 6gt3 and my 987.1 Boxster S. I spend 70% of time in 3rd, 15% in 4th, and the rest equally split between 2,5, and 6th. Actually, would be nice if the car kept track of this statistics in its memory.

There is a flap on this pipe that controls how much sound comes in, and I believe its control is related to the sport exhaust setting, though like the muffler flaps, it’s not a simple always on/off logic.

If so, this is a rather peculiar thing to say. Your redline is probably around 85mph. Even in my 987 I think redline in 2nd is around 72 mph.
Most of my driving is backroad. On the highway , I typically just shift into 6th and cruise.
Backroads I typically keep my revs in the 4K-6k range. Near the powerband but still rather far from redline.
For me to be in the powerband and in third gear, I would guess I would need to be doing at least 65mph. Rather infrequent on twisty backroads and pointless on the highway.

Engine sound is piped into the cabin, literally, as in there’s a pipe bringing engine compartment noises into the cabin. It’s called the Sound Symposer, and it’s different from the Soundaktor on the four cylinder models (which is essentially a speaker playing engine noises).
