It's an evolutionary war out there. Some plants kill instantly, some take decades to smother and incapacitate their predators via metabolic disruption, inflammation, and chronic diseases. Humans (and all carnivores) have evolved over millions of years to get their nutrients from the herbivores who are best evolved to handle the plants' attacks/defenses.
There's tons of info, studies, and literature on this out there, but admittedly it does enter "red pill" territory and you have to be driven enough to do your own digging. While your blanket statement regarding plant fats does hold some merit in regards to specific processed oils (eg: Palm Oil), but it's foolish to believe verbatim..
