I always use vintage Honda Z50's. They're a big hit, and everybody has a Honda Mini Trail story.
You can even get a huge flat luggage rack to bolt on to the back. Cupholder optional.
This is one of the last ones I restored - a '71 longtail with a 75cc big bore kit. There are numerous engines available in this configuration - all the way up to a DOHC 125cc monster.

Lots of nice bikes in this thread, but not many really useful for pit duty. We've had a Ruckus 50 and a Yamaha Zuma 50 (2 stroke). I like the Zuma better because its much lighter, half the cost, and its 2 stroke personality is way more fun, including all the wheelies you want.
Based on my experience, the 50cc scooters work best for pit duty, because they can carry a lot of stuff on their trays, they're cheap, they're light, they have electric start, and most thieves don't want them. Bikes with kick start & clutch are too much trouble for all the short trips to the bathroom, grid, etc.

Track season is here! Just finished up a full restomod on my beat to hell 70' CT70 pit bike. Everything is new. Will fit on the trailer a bit better than the Madass. Transplanted a 125cc engine into it.
Condition it started in. Picture looks better than actual condition, lol. Everything was worn out or rotten.
Painted to match the race car.
Came out pretty well. Now I think I need to do a pre 70's Z50.

Just to jump in an old thread ... i ended up buying the first poster's pit bike after he sold all his racing gear.
It's actually a 2000 Yamaha Jog50 which has a double seat ,electric start, fits very well at the back of my enclosed trailer, can carry 3 beer cans in the
little compartment in front of the seat and my girlfriend can do unexpected wheelies with it !
He told me it was white ... before i got to see it and pay for it, it was actually PURPLE and white and got nicknamed Barney by a few people
who had too many refreshments !
Ct70's are very popular as well, i have two in various states of overhaul !

I have been using my almost 30 year old Cannondale mountain bike as my pit bike for years now. Never needs fuel and gets me where I am going. Anything gas or electric costs a bunch of money and need maintenance and upkeep.
Aside from a little bit of air and oil on the chain the bike never needs anything.
