Down shifting " skip shift " or down each gear

I have been using a 915 and have driven quite a bit and realized when I got to drive a new GT3 the other day that I skip shift and when I saw the owner downshifting and releasing the clutch in every gear that I probably need to do it the same way .
It completely threw my braking and turning off and am looking to hear what others do . Pros and cons ??

I don't. If I need to go down 2 gears, I put in the clutch and brake, I then move the box, say from 5th to 4th to 3rd finding each gear (slowing the trans and making sure I find the correct gear), but not releasing the clutch, then I blip the throttle and release the clutch. Same for a 4th to 2nd. Once in while I will release the clutch in the middle gear if I feel I need some compression braking to help slow the car.

its not a good idea to skip gears unless you have a real close gear ratio gear box. remember the layshaft, drive shaft and clutch discs are still spinning at proportional wheels speeds, so skipping a gear puts much more wear on the synchros to slow the mass down between shifts. you could double clutch, but that is a lot of time in a race car.

Pat Long, in article I cannot locate at this moment, says to shift through each gear on the way down. He even mentions the older 911 gearboxes, though difficult by today's standard.
Do I? When possible I do. In learning my new car and braking much later I am finding it difficult to get right as the brake zone is shorter so everything has to happen faster. I end up skipping gears as a result. Just have to practice.
