Mosport, Mosport & Mosport !!! It's my favourite, and I've driven Tremblant, Calabogie, Watkins Glen, VIR and Mid-Ohio. I like Calabogie & VIR too... but, there's just "something" about good ol' "Mopsort" that defies words.

Monticello full track
vir
mosport
in no special order
did someone say Shenandoah that must be a joke.
were talking cream of the crop here.
summit point is nice but not on the top of the list unless you mount a machine gun on the hood for all the wildlife roaming out their.

While not in the USA, I would also add Mosport (Bowmanville, Ontario) to the list of must drives. Former F1 track with good elevation changes, high speed corners and two downhill blind left handers where you just trust the car will stick. This is a track with some major pucker factor.
If you can, also visit Le Circuit Mt. Tremblant, in the Intrawest resort town of Mt. Tremblant, Quebec, and the new Calabogie, Ontario course. These three tracks are all a few hours from one another.

Hastings, Nebraska

Hallett outside of Tulsa is a great little track as well, and they run it clockwise and counterclockwise
We don't get to hit the more known tracks that you coast guys do, but within 4 hours of KC we have Hastings, MAM, Hallett, Gateway, and Heartland Park. We do make the trek up to Brainerd and Road America every year though.
A few guys have been going down to Eagles Canyon in Texas and love it as well.

I'll second MPH in Hastings as well. George runs a nice facility and is proud of his track. While there are no garages in the paddock, you can rent one of the condos for $850 for the weekend. They have room for 6-8 people and have garage space for 6 cars. My avatar is me coming out of turn 13 in my Touareg this April. (993 was down for fried clutch and wife wouldn't let me take her R32)
Mid America Motorplex (MAM) in Glenwood, Iowa is a fun track as well. Built in an old cornfield, it too is flat with lots of safe runoff into grass. The surface is deteriorating in parts and the paddock is a mess of crumbling asphalt and like a lake in the rain, but I like it because it's only 25 minutes from home so I can drive there on my MPSCs.
I'm heading to Hallet in a few weeks.
Surprised nobody has mentioned Willow Springs, both the Big Track and the Streets of Willow. I did my first 3 DEs in my E36 M3 at WSIR. What a fun and incredibly fast track. Even as a novice I was entering turn 8 at 100-110 mph. And launching out of turn 9 down the straight is a thrill.

Don't forget Willow Springs, Fastest Road in the West, same track since the '50's.
